Thirsty Thursday-- Strawberry Daiquiri Cupcakes



Okay, so this isn't a drink like I normally post on Thirsty Thursday but it uses RUM and I thought it would be fitting for Thirsty Thursday.

I made these cupcakes for my Girl's Night Dinner the other day and they came out well -- a bit strong but they were good.


Strawberry Daiquiri Cupcakes

1 Box of Strawberry Cake Mix
Make according to box directions and replace the water with light rum or coconut rum. And add in 1 teaspoon of rum extract.

Bake according to the directions on the box.


Cream Cheese Frosting

1/2 cup of butter, room temperature
8 oz of Philly cream cheese, room temperature
2 - 3 cups of powdered sugar
1 teaspoon of vanilla extract

With an electric mixer, mix the butter and cream cheese together, about 3 minutes on medium speed until very smooth. Scrape down the sides and bottom of the bowl to ensure even mixing.
Add the vanilla extract and mix. Slowly add the powdered sugar. Keep adding until you get to desired sweetness and thickness.
