One Dish Chicken & Rice -- WW friendly

I have been making a spreadsheet of all of the main dishes that we like or want to try. The main reason for doing this is because we forget about great dishes that we like and we end up eating the same thing over and over.

This chicken dish is a quick dish that I had forgotten all about. It takes just a few minutes to get ready and into the oven, which is a major plus when we have sports, homework and other things going on each week. Plus it is a comfort food for me.

It isn't a pretty dish at all -- very blah looking but it does taste really good.


One Dish Chicken & Rice

1 can of cream of mushroom soup -- 98% fat free
1 cup water
3/4 cup white rice, regular/uncooked (I have used brown rice as well)
1/4 t paprika
1/4 t pepper
1 t garlic powder
4 chicken breasts -- season each one well with salt & pepper (or other seasonings)

Preheat oven to 375.
In 2 quart shallow baking dish; mix soup, water, rice, paprika, pepper & garlic powder.
Place chicken on rice.
Cover with foil and bake for 45 minutes or until chicken and rice are done.

***For creamier rice, increase water to 1 1/2 cups***


4 Servings; approx 6 points per serving
