Tortilla Crusted Tilapia
Tilapia is one of our favorite fishes because it takes flavor so well. We have tilapia every few weeks and one of our favorites is Tortilla Crusted Tilapia. It is a great and so easy. I normally buy it from the seafood department already to just pop into the oven because it saves me a bit of time in the kitchen and it is really good.
But we have also made our own and it is really good too.
Tortilla Crusted Tilapia
4 tilapia fillets
6 corn tortillas, cut into small pieces
1 jalepeno pepper, seeded and coarsely chopped
1 t lime juice
1/4 c fresh cilantro, chopped
1/2 t chili powder
1/4 t ground cumin
1 t seasoning salt
1 egg, beaten
Preheat oven to 375. Coat a baking sheet with cooking spray
Place tortilla pieces, jalepeno, lime juice, cilantro and spices into a blender. Pulse until the mixture is uniform small crumbs. Spread on a plate.
Beat egg in shallow dish
Dip each fillet in egg, then in crumbs, patting crumbs to adhere.
Place on baking sheet.
Bake until fish flakes, about 15 minutes depending on thickness of fillets.

I'm going to have to try this. We love tilapia and this looks full of flavor. I've got to admit that I've never cooked with a fresh jalepeno before. This is a good excuse to finally do it.
