Au Gratin Shredded Potatoes
1 package shredded hash brown (appox 1 lb 4oz bag)
2 cups fat free shredded cheddar cheese
1/2 cup chopped onion
1 t salt
1/2 t ground pepper
1 1/2 cups fat free sour cream
1 can cream of chicken soup -- 98% fat free
Preheat oven to 350.
Saute the onions in a small skillet that has been sprayed with non-stick spray, cook until tender.
In a large bowl, combine the soup, sour cream, salt, pepper, cheese and onion; mix until combined.
Gently stire in the potatoes until mixed throughout.
Spray a 7x11 baking dish with non-stick spray.
Pour the mixture evenly into the prepared dish.
Bake uncovered for 45-50 minutes or until hot and bubbly.
Let stand for 5 minutes before serving.
Serves 8 (2/3 cup each)
