WW Wednesday -- Eggs Florentine

Eggs Florentine

4 large eggs whites
1 t water
1/8 t salt
1/8 t pepper
1 t red onion, chopped
1 c packed baby spinach leaves
2 slices WW cheese singles
1 WW Wheat English Muffin, split and toasted

Combine eggs whites, water, salt & pepper in a small bowl and set aside.
Heat a non-stick skillet with cooking spray. Add red onion and saute until soft, stir in spinach and continue cooking until spinach wilts. Add egg-white mixture and cook until egg whites are cooked. Put egg mixture on bottom of english muffin, top with cheese singles (melt cheese in oven). Top the the other half of english muffin.
