1 bag of broccoli & califlower mix
4 T, butter divided
1/2 small onion, finely chopped
1 garlic clove, minced
1/8 cup AP flour
1 cup 2% milk
1 egg yolk, beaten
1/2 cup grated Parmesan cheese
1/4 t salt
1/8 t pepper
1/4 cup whole wheat bread crumbs
Preheat oven to 400 degree.
Steam the broccoli & califlower and then place in 8x8 pan.
In small saucepan over medium heat, melt 2 T butter. Add onion, cook and stir until tender. Add garlic, cook 1 more minute. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir a small amount of hot mixture into egg youlk; return all to the pan, stirring constantly. Cook and stir 1 minute longer. Remove from the heat; stir in the cheese, salt and pepper.
Pour cheese sauce over broccoli & califlower.
Melt 2 T butter in small skillet and add breadcrumbs. Sprinkle over top of veggies.
Bake uncovered at 400 degree for 15-18 minutes.
