For serveral weeks I have been trying to figure out what Nutella recipe to make and I finally decided on a Nutella Ice Cream sandwiched between two Nutella Cookies!



Nutella Ice Cream
This recipe is for a 1.5 quart ice cream maker

1 cup Nutella
2/3 cup granulated sugar
1 cup whole milk
2 cups heavy cream
2 teaspoons vanilla extract

In a medium bowl, combine the creamy peanut butter and sugar with an electric hand mixer and beat until smooth.

Add the milk and blend on low speed for about 2 minutes until the mixture is smooth and the sugar has been dissolved.

Stir in the heavy cream and vanilla with a mixing spoon or a whisk.

Cover with plastic wrap and chill in the refrigerator for 2 hours.

When ready, pour the ice cream base into your frozen ice cream maker bowl.

Let mix until thickened, about 15-20 minutes.

Pour into a freezer safe container and freeze for at least 2 hours.





Nutella Gooey Butter Cookies


1 box chocolate cake mix
8 oz cream cheese, softened
1/2 cup butter, softened
1 egg
2 tsp vanilla extract
3/4 cup Nutella
powdered sugar

In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Add the egg. Then beat in the Nutella and vanilla extract. Mix in the cake mix. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls.

Preheat oven to 350 degrees F.

Roll the chilled batter into tablespoon sized balls (medium cookie scoop) and then roll them in powdered sugar. Place on an ungreased cookie sheet. Bake 15-18 minutes. The cookies will remain soft and gooey.


Nutella Ice Cream Sandwiches

Find two cookies that are similar in size and shape. Place a large scoop of Nutella Ice Cream on one cookie and top with second cookie. Place back into freezer for 5-10 minutes to get ice cream to set back up.

I served mine with strawberries dipped in Nutella that I heated up for about 30 seconds in the microwave.
