WW Wednesday -- Bacon, Egg & Hash Brown Stack

When I first started doing WW, I came across this recipe and we really enjoy it. This can be a quick week day breakfast if you prepare the egg mixture ahead of time and then just cook the hash brown patties and heat the egg mixture in the microwave or small skillet. I do normally add a bit of cheese to the top of the stacks but that will add to the point value.


Bacon, Egg & Hash Brown Stacks

Butter-Flavor Cooking Spray
4 Frozen Hash Browns
2 Large Eggs
3 Large Egg Whites
3 oz Canadian-Style Bacon, finely chopped
1 T minced scallions
1/8 t hot pepper sauce
1/8 t salt
1/8 t black pepper

Coat a skillet with cooking spray, place hash browns patties in skillet. Cook over medium heat on first side until golden brown (7-9 minutes). Flip patties and cook second side till golden brown (5 minutes).

Meanwhile, coat a second skillet with cooking spray, heat over medium heat. Beat together eggs, egg whites, bacon, scallions, hot pepper sauce, salt & pepper in a large bowl. Pour into prepared skillet and the increase the heat. Scramble mixture until the eggs are set.

To assemble stacks, place 1 hash brown patty on plate and top with 1/4 of egg mixture. Season to taste with salt & pepper.
