The weather is turning cooler here in Central Texas and with that means we are breaking out the soup recipes and finding some new ones to try out. Recently, I found a recipe for White Chicken Chili over at Plain Chicken and when Steph says that it is quick, it really is.
White Chicken Chili

1 Tbsp olive oil
1 pkg. McCormick White Chicken Chili seasoning mix
1 lb. cooked boneless skinless chicken breasts, cut into 1/2-inch cubes (I used Taco Chicken that I fixed in the crock pot but you can use chicken from the deli)
1 1/2 - 2 cups chicken broth
1 14.5 oz. can white beans, undrained
Heat olive oil in large pot. Add chicken and cook over medium heat 3 to 5 minutes. Stir occasionally. Stir in seasoning, beans and chicken broth. Bring to a boil. Cover and reduce heat to simmer for 10 minutes.
