We spend more money that I care to admit on pre-made chewy granola bars for snacks and for an easy breakfast. I found these non-bake granola bars awhile back and they are good and very quick (plus a bit better than the ones you buy at the store).
Non-Bake Granola Bars
http://cookiesandcups.blogspot.com
4 T unsalted butter
1/2 c light brown sugar, packed
1/4 c honey
2 c granola (I use Canandian Farms brand)
1 c rice cereal
1/2 c raisins
1/2 c thing pretzel sticks broken in half
1/2 t salt
1/2 c chocolate chips, pb chips, etc (I use a mixture of choco chips and pb chips)
In a medium saucepan combine the brown sugar, honey and butter and melt over medium-high heat until sugar is dissolved, approx 2 min.
Remove from heat and fold in the remaining ingredients EXCEPT the chips. If you add the chocolate chips in now they will melt.
Press mixture into an ungreased 9x13 evenly. Now gently press your chips on top.
Chill in fridge for 15 min. or so. Then remove and cut into bars.
