With the holidays approaching at top notch speed, I am thinking about side dishes and what we have had in the past and what new ideas to try out. Last year at a Holiday pot-luck lunch at work, a wonderful co-worker brought this great corn dish. After she shared her recipe, I made it for Christmas dinner last year. It was a great success with E's family.
Jalapeno Creamy Corn
4 cans shoepeg corn (drained)
2 packages cream cheese (8oz each)
1/2 stick of butter
salt & pepper to taste
1/4 cup milk
Diced pickled jalapenos -- approx 1/4 of a jar (more or less depending on your taste buds)
Preheat oven to 350
Mix butter & cream cheese together.
Add milk, corn, salt, pepper and diced jalapenos.
Pour into a casserole dish (sprayed with non-stick spray) and bake until warmed all the way through and a bit bubbly.
We have enjoyed this with ham, BBQ, turkey and prime rib -- it wasn't so spicy that the kids couldn't enjoy it but had just enough heat for the adults.
