Monster Oatmeal Cookies




We have been craving oatmeal cookies at our house and I searched for a recipe that didn't have tons of butter/shortening in them which was hard to find. Finally, found a recipe that sounded good and gave it a try.

Soft Oatmeal Cookies

•2 cups Old Fashioned Rolled Oats
•1 cup All Purpose Flour, Sifted
•¾ cups Granulated Sugar
•1 teaspoon Baking Soda
•½ teaspoons Salt
•½ teaspoons Cinnamon
•½ cups Canola Oil (or Other Flavorless Oil)
•⅓ cups Orange Juice
•½ teaspoons Vanilla
•1 whole Large Egg
•1 cup Raisins
•½ cups Chopped Walnut (optional)

Preheat oven to 350 degrees. Grease 1 or 2 cookie sheets.

In a large bowl, combine all ingredients except raisins (and walnuts, if using). Stir to combine.

Then fold in the raisins (and walnuts, if using) and stir to combine.

Depending on how large you want your cookies to be, drop dough on the cookie sheet(s) by the teaspoon or tablespoonful. You can also make jumbo cookies by using a 1/4 cup measuring cup. (If you are making jumbo cookies, flatten down the dough with a moistened palm.)

Bake for 10 to 13 minutes, or until set. If using 2 cookie sheets, switch racks halfway through baking. (Jumbo cookies will take a little longer to bake.)

Remove cookies to a wire cooling rack and cool to room temperature.


These are in the oven now. I will update on how they are once E gets to taste them tomorrow.

I tried them and they are okay but not great. Not sweet and a bit dry. I am interested in seeing what E thinks.
