WW Wednesday -- Orange-Crumbed Baked Chicken

I dug out the cookbooks to get some new ideas the other day and found this Orange-Crumbed Baked Chicken in Weight Watchers New Complete Cookbook 2006. It looked & sounded really good so I added it to our menu to try out.

I must say that I was disappointed in this receipe. It had too much of an orange flavor and the breading didn't stay on the chicken very well.


Orange-Crumbed Baked Chicken

Points value: 3

2 T orange juice
2 T Dijon mustard
1/4 t salt
3/4 c whole-wheat cracker crumbs
1 T grated orange zest
1 shallot, finely chopped
1/4 t ground black pepper
4 (3oz) skinless boneless chicken thighs (I did use breasts)


Preheat oven to 350; spray a nonstick baking sheet with cooking spray.

In a small bowl, combine the oj, mustard & salt. On a sheet of wax paper, combine the cracker crumbs, orange zest, shallot and pepper. Brush the chicken with the mustard mixture, then dredge in the crumbs, firmly pressing the crumbs to coat the chicken on both sides. Place chicken on baking sheet.

Bake 15 minutes; turn over and bake until cooked through, 15-20 minutes longer.
