Big Cooking Weekend -- Stocking your Freezer

I try to keep a few meals in the freezer to use when we have a busy week or to help keep dinners quick during the week. Since, I was off all weekend and it was a rainy and cold weekend I got a lot of items cooked and stocked away in the freezer.

I have two ways that I like to stock the freezer:
1) When making certain dishes, I double so I can freeze one
2) I cook a bunch of stuff over a two day period and freeze what I make


Here is what I did over the weekend to help stock up my freezer:
Mexican Chicken -- done in crock-pot and shredded for tacos, enchaladas, etc
Ground Chicken Breast cooked & seasoned with taco seasoning
Pasta Bake -- used up some leftover pasta sauce & pepperoni
Waffles -- had for Sunday breakfast and the leftovers went to the freezer
Meatballs -- perfect for subs or pasta
Cheddar Cheese -- shredded
Apple Cinnamon Muffins


Apple Cinnamon Muffins
3 pounds of cheddar cheese

Mexican Chicken -- 2 cups for freezer, 2 cups to use for the week

Pasta Bake & 2 pounds of taco meat


Not pictured -- 42 meatballs & waffles

  1. That is such a great idea. My freezer is crazy stuffed I wish I was able to do this, because it would be very helpful during the week.
