Sweet Tooth Tuesday -- Chocolate Pie

We had pie and more pie for Thanksgiving and I enjoyed every minute of it. Actually, one of our pies went missing and we still had plenty of pie. (it didn't really go missing, it was left on our kitchen counter by mistake, I won't go into detail on who made the mistake)

One of my few memories of my Grandmother Parker is her Chocolate Pie. I love chocolate pie, but I don't care for meringue at all. I prefer a whip cream or cool whip.

Here is the chocolate filing recipe that does take a bit of time but it is worth it!




Chocolate Pie Filling
3 Tablespoon Cocoa
1 Cup Sugar
3 Tablespoon Flour, heaping
1 Dash Salt
2 Egg Yolks
2 Cups Milk

Cook all ingredients until thick then add:

2 Tablespoons Butter
1 1/2 teaspoon Vanilla

Mix until thick and let cool. Pour into cooked pie shell. Top with cool whip/whip cream or meringue.
