Side Dish Saturday -- 1 Point Salad

This is a great thing to keep in the fridge all cut up and ready -- just wait to add the dressing till later. We make a batch (it makes a lot of salad) and then portion it out and then add the dressing prior to eating. Great to pack for lunches or to take to a potluck.

1 Point Salad

Makes 8 Servings


3 cups broccoli (bite size pieces)
3 cups cauliflower (bite size pieces)
1 cup celery
1/2 cup black olives (about 18 medium)
1 (16 oz) can mushrooms drained
1 (18 oz) can sliced water chestnuts drained
3/4 cup fat free Italian dressing

Combine all ingredients in large bowl. stir or cover and
gently shake to coat vegetables. chill for several hours.
