Leftover Thanksgiving Patties

Several years ago, I saw a recipe on Rachel Ray that used up various items from Thankgiving. I have made these patties every year since seeing her make the recipe. I have made changes and adapt it to whatever leftovers that are still in the fridge a few days after Thankgiving. It also makes the turkey a bit more exciting. I have also made up fresh potatoes (or used instant) if I don't have any leftover.


Leftover Thankgiving Turkey Patties

2 cups mashed potatoes
4 cups diced turkey (white or dark or a mix)
2 cloves garlic, minced
Onion, celery, bell pepper -- no exact measurements
Salt & Pepper to taste
1 cup breadcrumbs (approx) or you can use dressing/stuffing
1 egg
Extra breadcrumbs for coating
Parm cheese

Mix everything but the parm cheese & extra breadcrums together.
Form into patties and coat in extra breadcrumbs & parm cheese.
Cook in a hot skillet with a small amount of oil.

Serve with mac & cheese, cranberry sauce, dressing/stuffing, green beans, etc
