Yummy Soup!


Since it is getting colder I thought I would share a yummy soup that my dear friend Stormi made for me recently. I have made a few additions to it.


Tortellini Soup

1.5 to 2 pounds Italian Sausage
2 large containers (32 oz each) Beef Broth
1 can diced tomatoes, garlic flavor
2 cans tomato sauce, basil/garlic flavor
3 small zucchinis, diced
1 can green beans
1 can cannellini beans
1 cup shredded carrots
1-3 Tablespoons minced garlic
Italian seasoning to taste
Salt & Pepper to taste
1 bag of frozen cheese tortellini
Mozzarella cheese, grated

In a large saucepan over high heat, cook italian sausage, stirring frequently, until all pan juices evaporated and sausage is well browned, about 10 minutes. Spoon off any excess fat.

Add in beef broth, tomatoes and tomato sauce, heat until boiling. Add in zucchini, green beans, cannellini beans, carrots, seasonings and garlic. Cook for approx 30 minutes or until zucchini is tender. Add in frozen tortellini and cook until pasta is done, approx 8-12 minutes.

Ladel into bowls and top with cheese. Serve with french bread and salad.

This does make a large amount of soup but it is great leftover!
