Awhile back E mentioned that I should use Nutter Butter cookies in a brownie, cupcake or cookie and I looked for the cookies at the store and couldn't find them and I sort of forgot about the challenge of a Nutter Butter desssert until I took G with me to the grocery store. He was looking at some cookies on the bottom shelf and as I was seeing what he was pointing at, I noticed a package of Nutter Butters! I was so happy and tossed them in the basket.
I decided to make cupcakes with the Nutter Butters and adapted the Oreo cake receipe that I used for G's 7th birthday.
Nutter Butter Stuffed Cupcake with Peanut Butter Buttercream Frosting
Cupcakes Batter
1 box of yellow cake mix with pudding
3 eggs
1 cup water
1/2 cup oil
18 crushed Nutter Butters
Additional Nutter Butter cookies to stuff cupcakes with (1/4 of each cookie per cupcake)
Peanut Butter Buttercream Frosting
1/2 cup butter, softened
1 cup creamy peanut butter
2 1/4 cup of confection sugar
1 teaspoon of vanilla
3 teaspoons of milk, or as needed
Pre-heat oven to 350.
Mix cake mix, eggs, water & oil together. Fold in crushed Nutter Butters.
Fill cupcake liners 1/4 of the way and put a 1/4 piece of a Nutter Butter on top of batter, pour more batter to cover the cookie piece.
Bake 15-20 minutes until toothpick comes out clean and tops are browned.
While cupcakes are cooling make the frosting.
Mix softened butter & peanut butter until smooth. Add in vanilla and 1 cup of sugar, once mixed add in the rest of the sugar and milk. Mix until the desired consistency.
Once cupcakes are cool, frost with PB Buttercream Frosting.
How delish and cute are these. My husband eats EVERYTHING and ANYTHING peanut butter. So I will definitely have to make these for him!
