WW Wednesday -- Banana Pancakes

Banana Pancakes

1 Large Egg
1 tsp Sugar
2 tbsps Vegetable Oil
1 cup AP Flour
1 cup 2% Milk
1/4 tsp Salt
2 cups Mashed Banana (approx 4 bananas)
2 tsps Baking Powder
1/2 t Cinnamon
1/2 t Vanilla


Combine flour, sugar, baking soda, salt and cinnamon.
In a separate bowl mix together egg, milk, vegetable oil, vanilla and mashed bananas.
Stir flour mixture in to banana mixture; batter will be slightly lumpy.
Heat a lightly oiled griddle or frying pan over medium high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Cook until pancakes are golden brown on both sides; serve hot.



***I think next time I will add in 1/8 to 1/4 cup of chopped pecans to give it a banana nut bread taste***

  1. Yum I love banana pancakes. However I usually just cut my bananas up and don't mash them. Definitely going to have to try to mash them next time. Thanks for sharing.
