Sweet Potatoes & Apples in the Slow Cooker

3 sweet potatoes (medium size)
4 small apples
1/2 cup apple juice
4 Tbs. brown sugar
2 tsp. cinnamon
dash nutmeg
Clean, peel and chop the apples and sweet potatoes. Put them in the crock of the slow cooker. Stir the apple juice, brown sugar, cinnamon and nutmeg together. Pour over the apples and sweet potatoes, stirring to coat. Cook on low for about 4-6 hours.
We had this last night and it was a good side dish -- it cooked a bit longer because I was a bit later getting home that I planned to. I wouldn't cut the apples in quarters like I did, they were a bit too small and cooked down a bit too much.
