Banana Zucchini Carrot Bread
Banana Zucchini Carrot Bread
Makes 1 loaf or 12 large muffins

1 extra large egg
1 cup sugar
1/3 cup butter
1 dash salt
1 tsp vanilla
3 medium bananas
1/2 cup grated carrots
1 cup chopped zucchini
1 tsp baking soda
2 cups flour
1.Pre-heat oven to 350 °F.
2.Melt butter and pour into large bowl.
3.Add bananas and mash. Add grated zucchini and shredded carrots. Mix well.
4.Add sugar, beaten egg, and vanilla.
5.Sprinkle in baking soda and salt and mix. Add flour and mix well.
6.Pour in 4x8" loaf pan or two muffin trays (6 large each).
7.Bake loaf for 60-75 minutes. Bake muffins for approx 20-30 minutes.
8.Let cool on tray and serve.
